These are the recipes we made at our last 'dish-jockeying' performance at the 6th Barcelona Boss Sounds
Weekender
.
For the fourth year over we've been providing for the food for the Sunday do.

JERK CHICKEN WINGS
10 servings

Ingredients
• 40 chicken wings
• 1 bunch whole spring onions, finely chopped
• 3 large cloves garlic, crushed

3 Scotch Bonnet peppers (any color)
• 2 large sprigs fresh thyme (or 2 tablespoons dried)
¼ cup ground allspice (dry pimento berries)
• 2 tablespoons freshly groud black pepper
• 1½ tablespoons salt
• 1 cup water

Preparation
In a large bowl, combine all ingredients except the water.
Mix well and add water to form a loose paste.
Pour the paste onto the meat and, using plastic gloves, rub it all over.
Let stand in refrigerator overight.
Cook it on the barbecue or in the oven full whack and on grill stand, in an oiled baking tin, skin side up, turning once the skin has turned brown and crispy.

tip: we added a couple of tablespoons Reggae Reggae BBQ Sauce
to make the paste runnier.


SPICY BEAN SALAD
12 servings

Ingredients
• 340g dried kidney or pinto beans, cooked until tender or 4 400g cans black beans, drained, rinsed
• 3 or 4 ripe tomatoes, peeled, seeded, chopped
• 1 red or green bell pepper, chopped
• 1 sweet onion, finely chopped
• ¼ cup lime juice
• ¾ cup olive oil
• 1 tablespoon cumin
• 2 tablespoons mayonnaise
• salt & pepper


Preparation
Toss beans with vegetables in a large bowl, then mix dressing ingredients.
Drizzle on vegetables and toss again. Cover and refrigerate until serving time.
Serve with Jamaican crackers or cream crackers.


JAMAICAN BANANA RUM CAKE
8 servings

Ingredients
• 150g butter
• 280g sugar
• 2 eggs
• 250ml milk (1 cup)
• 1 cup mashed bananas
• 565ml (2¼ cups) self raising flour
• 5 tsp rum
• 1 tsp baking powder
• 1 tsp bicarbonate of soda
• ½ tsp salt
• 60g (½ cup) walnuts
• 190ml (¾ cup) brown sugar


Preparation

Heat oven to 175ºC.
Cream butter, sugar, rum and eggs in large bowl until creamy and slightly fluffy.
Add milk, bananas, flour, baking powder, bicarbonate of soda and salt.
Beat at low speed of electric mixer until blended, scraping bowl constantly.
Beat at medium speed for 3 minutes.
Chop the walnuts and add them to the bowl.
Bake for 40 to 45 minutes, or until golden brown and wooden pick inserted in center comes out clean.
Cool 5 minutes.




 
 
Drinks

MOSCOW MULE

Ingredients
• 2 parts vodka
• 4 to 6 parts ginger beer
½ part lime juice

Glass type
Moscow Mule mug or Moonshine jar

Preparation
Squeeze lime juice into the glass and drop in the spent shell.
Add 2 or 3 ice cubes, then pour in the vodka and fill with cold ginger beer (use Old Jamaica if you like it sweet, Reeds for less sweet).
Serve with a stirring rod.



BANANA DAIQUIRI
makes about half liter

Ingredients
• ¾ cup rum
• 1½ ripe bananas, peeled
• juice of 1 lime
• 1 strip lime rind
• 3½ tablespoons sugar
• 10 ice cubes

Preparation
Combine all of the ingredients in a blender jar and blend on high speed until the texture is smooth.
Serve in glasses with a lime wedge and an extra splash of rum.
